  • 🧈 ½ cup (115g) unsalted butter, softened
  • 🍚 ¾ cup (150g) granulated sugar
  • 🥚 1 large egg
  • 🌾 1 ½ cups (190g) all-purpose flour
  • 🥄 ½ tsp baking soda
  • 🥄 ½ tsp baking powder
  • 🥄 ¼ tsp salt
  • 🍦 1 tsp vanilla extract
  • 🍯 1 tbsp honey (for extra moisture & flavor)

Instructions

  1. Prepare the dough 🍯

    • In a bowl, cream together the butter and sugar until light and fluffy.
    • Beat in the egg, vanilla extract, and honey.
    • Stir in the drained crushed pineapple.
  2. Mix the dry ingredients 🌾

    • In another bowl, whisk together the flour, baking soda, baking powder, and salt.
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  3. Chill & shape ❄️

    • Cover the dough and refrigerate for 30 minutes (this helps prevent spreading).
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Scoop small dough balls onto the baking sheet, spacing them slightly apart.
