Instructions

  • Roast the Garlic:

    • Slice the top off the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden. Let it cool, then squeeze out the cloves and mash into a paste.
  • Prepare the Dough:
    • In a large bowl, combine flour, salt, and yeast.
    • Add the roasted garlic paste and chopped rosemary.
    • Pour in the water and mix until a sticky dough forms.
  • First Rise:
    • Cover the bowl with plastic wrap or a damp cloth. Let the dough rise at room temperature for 12-18 hours, until bubbly and doubled in size.
  • Shape the Loaf:
    • Turn the dough onto a well-floured surface. With floured hands, shape it into a ball.
    • Place the dough seam-side down on a piece of parchment paper. Cover with a towel and let it rest for 1-2 hours.
  • Preheat the Oven:
    • About 30 minutes before baking, place a Dutch oven (with lid) into your oven and preheat to 475°F (246°C).
  • Bake the Bread:
    • Carefully remove the Dutch oven and place the dough (on the parchment) inside.
    • Cover with the lid and bake for 30 minutes.
    • Remove the lid and bake for an additional 10-15 minutes until the crust is deep golden brown.
  • Cool and Enjoy:
    • Transfer the bread to a wire rack and let it cool for at least 30 minutes before slicing.
